Nothing speaks to understanding a culture like learning to prepare a local dish from a local Chef. In our case it was Sanae. There are 60 or more options for Moroccan cooking classes in Marrakech. We selected this one because it was later in the afternoon and featured a whole meal. We booked our reservation about 10pm the night before and were told to meet our guide in front of a restaurant in the Jemaa El Fna square. About 10 minutes after the designated time our guide arrived and sought us out. She was 28 and had lived in Marrakech for sixteen years or more. To begin with we went to the nearby market to purchase the items for our meal. First, fresh chicken right off the hoof, so to speak. We found an area behind the stalls in the market that had all kinds of foul in crates. Our guide selected the bird of choice and the shop keeper repaired to the butcher to have the bird killed and dressed. If you have not had any similar experiences this one may make you queasy. As a child fortunately my best friend's family had a chicken farm so I was not bothered by the smells and process. After selecting our bird we visited other stalls with a variety of vegetables and selected those we would use for the recipe. We followed our guide as she expertly guided us through the alleys and streets in the back roads of old Marrakech to the Riad for whom she worked. On the roof top a kind of make shift kitchen had been constructed and after riding in the elevator we settled in for our tea making lesion. A bit later we began in earnest preparing the ingredients for our meal. Throughout the session our guide explained in detail the process and the history of various aspects of her culture and our meal. Her knowledge of both was impressive. When completed we sat down to a full meal and conversation. Overall the experience was both impressive, informative and relaxed. Classes usually hold 8-10 people, ours was limited to my wife and I. As a result there was not as much chatter than might have happened with a larger group. Our guide and her assistant were clearly involved in preparing for the instruction which left us waiting on occasion. After dinner our guide directed us back through the streets (alleys really) of Marrakech in order that we might find our way back to our hotel. This was a memorable and informative experience. We have no reason not to recommend it. Learn the cooking, learn the people.
